Warm spices, real pumpkin, and a dramatic puffed edge make this oven pancake one of those showstopper breakfasts that looks far more complicated than it actually is. Every ingredient here is naturally free of citric acid — no packaged mixes, no citrus-derived preservatives, no store-bought syrups with hidden additives — just whole eggs, milk, pumpkin purée, and pure maple syrup doing all the heavy lifting. The batter comes together in minutes, and the real magic happens in a screaming-hot cast iron skillet that sends the edges soaring into golden, crispy-tender billows while the center stays custardy and soft. Fresh ginger gives it a gentle, bright heat that plays beautifully against the earthy pumpkin and the warm depth of Ceylon cinnamon. Because Ceylon cinnamon is naturally lower in coumarin and carries a softer, more floral flavor than the common cassia variety, it keeps the spice profile clean and gentle without any sharpness. A final drizzle of pure maple syrup ties everything together, and the whole thing goes straight to the table cut into wedges right from the pan. It's the kind of cozy weekend breakfast that feels like a real occasion without requiring much effort at all.

Place a 10-inch or 12-inch oven-safe skillet (cast iron preferred) on the center rack of the oven and preheat to 425°F (220°C). Allow the skillet to heat for the full preheat time, at least 15 minutes.
In a blender (or in a large bowl using a whisk), combine the eggs, milk, pumpkin purée, 2 tbsp maple syrup, grated ginger, Ceylon cinnamon, and salt. Blend or whisk until completely smooth, about 30 seconds in a blender or 1 minute by hand. Add the flour and blend or whisk just until no dry streaks remain and the batter is smooth and pourable — it will be thinner than standard pancake batter.
