This dramatic oven pancake puffs up into a golden, cloud-like showstopper with edges that crisp and caramelize while the center stays tender and custardy. Real pumpkin purée, freshly grated ginger, and pure maple syrup do all the heavy lifting here — no flavor packets, no extracts, no shortcuts that sneak in synthetic additives. Ceylon cinnamon adds a delicate warmth that's noticeably more nuanced than the standard stuff, and the whole batter comes together in a blender in under a minute. The trick is a screaming-hot cast iron skillet loaded with butter, which gives the pancake its dramatic rise and those irresistible lacey, golden edges. Once it comes out of the oven, a drizzle of pure maple syrup soaks into every fold and crevice for a finish that tastes genuinely indulgent. It deflates a little as you serve it — totally normal, totally worth it — and cutting it into wedges straight from the skillet makes the whole thing feel like a weekend event.

Place a 10-inch or 12-inch oven-safe skillet (cast iron preferred) on the center rack of the oven and preheat to 425°F (220°C). Allow the skillet to heat for the full preheat time, at least 15 minutes.
In a blender (or in a large bowl using a whisk), combine the eggs, milk, pumpkin purée, 2 tbsp maple syrup, grated ginger, Ceylon cinnamon, and salt. Blend or whisk until completely smooth, about 30 seconds in a blender or 1 minute by hand. Add the flour and blend or whisk just until no dry streaks remain and the batter is smooth and pourable — it will be thinner than standard pancake batter.
