Warm spiced apples, a golden oat crumble, and the gentle sweetness of pure maple syrup — these bars hit every cozy-baking note without a single ingredient that tends to trigger histamine reactions. Fresh diced apples are cooked down with ground ginger and cardamom until they're jammy and fragrant, then nestled between a pressed oat crust and a loose, crunchy topping. The base comes together with rice flour, tapioca starch, and solid coconut oil, keeping everything dairy-free and free from the aged or fermented ingredients that can be so problematic for sensitive systems. Because the apple filling is made from scratch on the stovetop, you control exactly what goes in — no mystery preservatives, no vinegar, no hidden additives hiding in a store-bought pie filling. The tapioca starch thickens the juices beautifully, so the filling stays put when you slice into the bars rather than running everywhere. This recipe makes 12 bars, which means you can stash a few in the fridge for the week or share them without anyone feeling like they're eating a "special diet" version of something. They taste like the real thing, because they are.

Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving a 2-inch overhang on two opposite sides to use as handles for lifting the bars out later.
In a large mixing bowl, whisk together the rolled oats, rice flour, 1/4 cup tapioca starch, baking powder, salt, and 1/2 tsp ground ginger until evenly combined. Add the solid coconut oil and use a pastry cutter or fork to cut it into the dry ingredients until the mixture resembles coarse, clumpy crumbs with some pea-sized pieces remaining. Drizzle in 3 tbsp maple syrup and the vanilla extract and stir until the mixture just comes together into a crumbly, slightly sticky dough.
