Slow-braised brisket is the kind of showstopper that fills the whole house with an aroma that makes everyone wander into the kitchen asking when dinner is ready. This version builds deep, complex flavor from a braising liquid of coconut aminos, pure maple syrup, apple cider vinegar, and bone broth ā no soy sauce, no Worcestershire, no legume-derived ingredients hiding anywhere in the pot. Coconut aminos does a remarkable job standing in for the savory, umami-rich depth you'd normally get from soy-based sauces, and the maple syrup adds just enough sweetness to balance the tang of the apple cider vinegar. A generous rub of turmeric, ground ginger, and sea salt gets seared into the meat before it ever hits the braising liquid, locking in a gorgeous golden crust. Sliced onion, smashed garlic, fresh ginger, and carrots round out the braise, so by the time the brisket comes out of the oven after a long, low cook, the whole pot is practically a meal on its own. Sliced against the grain and draped with that glossy, herb-scented braising liquid, this is the kind of dish that earns serious compliments at the table ā and nobody needs to know how straightforward it actually was to pull off.
