Place the chicken breasts in a medium saucepan with the water, 1 tsp salt, and thyme sprigs. Bring to a gentle simmer over medium heat, then reduce to medium-low and cook for 15–18 minutes, until the chicken is opaque throughout and reaches 165°F (74°C) on an instant-read thermometer at the thickest part.
Transfer the chicken to a cutting board and let it rest for 10 minutes. Discard the poaching liquid and thyme. Once rested, shred or slice the chicken into bite-sized pieces.
