  Chef's tip

Use the same amount. Pick the form that matches the recipe - ground-style if the sausage is crumbled, links if it stays whole. If the package says precooked, add it later in cooking and just heat it through.

•

  1 red bell pepper, diced
•

2 cups baby spinach, roughly chopped
•

  1 tsp garlic powder
•

  ½ tsp smoked paprika
•

  salt and pepper, to taste
•

8 cups day-old white or sourdough bread, cut into 1-inch cubes (about 10 oz)
  Suggested products
•

2 cups shredded cheddar cheese, divided
  Required swap

  Chef's tip

If the dish is baked or melted, cover it or keep the heat gentle - dairy-free shreds melt more slowly than dairy cheese.
•

  8 large eggs
•

  2 cups whole milk
  Required swap

  Chef's tip

Use plain, unsweetened oat milk, measured 1:1. It works well in drinks, batters, sauces, and soups; avoid it where milk sets the texture, like custards, puddings, and frozen desserts.
•

  ½ cup heavy cream
  Required swap

  Chef's tip

Use unsweetened dairy-free heavy cream in cooked sauces, soups, and ganache. For whipped uses, choose a product labeled whippable.
•

  1 tsp dijon mustard
  Suggested products
•

  ¼ tsp dried thyme
•

1 tbsp unsalted butter, for the baking dish
  Required swap

  Chef's tip

  Use a stick or block-style dairy-free butter - not a soft tub spread - and swap one-for-one.

For serving

•

2 tbsp fresh chives, thinly sliced (optional)
