Sweet, tender lobster gets tossed with crisp fennel, cool cucumber, and celery for a salad that's as refreshing as it is elegant. Fresh parsley and tarragon bring an herby brightness, while a touch of grated ginger and honey add unexpected warmth to the dressing, finished with a good pour of extra-virgin olive oil and a splash of white wine vinegar. Piled onto butter lettuce and topped with a few reserved fennel fronds, it's a light, seafood-forward dish that feels both special and effortless. Lean protein, plenty of fresh vegetables, and good olive oil make this one an easy fit for a Mediterranean-style table. It's the kind of dish that works just as well for a laid-back lunch as it does for entertaining guests who expect something a little more refined.

If starting with whole live lobsters, bring a large pot of salted water to a rolling boil. Add the lobsters and cook for 8–10 minutes, until the shells are bright red and the meat at the thickest part of the tail reads 145°F (63°C) on an instant-read thermometer. Transfer to a cutting board and let cool for 15 minutes before removing the meat. If using pre-cooked lobster meat, skip to Step 2.
Cut the cooled lobster meat into 1-inch pieces and place in a large bowl. Add the sliced fennel, cucumber, celery, parsley, and tarragon.
