Pat the paneer cubes dry with paper towels and season lightly with salt and pepper. Heat 1 tbsp of the oil in a large wok or 12-inch skillet over medium-high heat until shimmering. Add the paneer in a single layer and sear undisturbed for 2ā3 minutes, until the undersides are deep golden. Flip and cook for another 1ā2 minutes until golden on the second side. Transfer to a plate and set aside.
In a small bowl, whisk together the coconut milk, soy sauce, fish sauce, brown sugar, red pepper flakes, lime juice, and lime zest until combined. Set aside.
