Shake or stir the can of coconut milk well before opening to recombine any separated cream. Pour the coconut milk and almond milk into a medium mixing bowl and whisk together until smooth and uniform.
Add the chia seeds, lemon juice, lemon zest, vanilla extract, and salt to the bowl. Whisk vigorously for about 1 minute until everything is evenly distributed.
