Rutabaga is one of those underrated root vegetables that absolutely shines when you give it a little patience and the right pan. Parboiling the cubes first, then searing them in coconut oil until deeply golden, builds a caramelized crust that makes this hash genuinely crave-worthy — not just a side dish you eat out of obligation. Softened onion, garlic, turmeric, and ginger layer in warmth and color, while a finishing hit of lemon zest, fresh lemon juice, parsley, and thyme lifts the whole skillet into something bright and lively. Every ingredient here is clean and straightforward, which is exactly what you need when you're cooking within the autoimmune protocol and can't afford any guesswork about what's in your food. No nightshades, no eggs, no grains — just real produce and a handful of herbs doing all the heavy lifting. It serves four, so it works beautifully as a weeknight side or a meal-prep staple you can reheat throughout the week.

Bring a medium pot of salted water to a boil. Add the rutabaga cubes and cook for 6–8 minutes, until just barely fork-tender at the edges but still firm at the center — they should not be fully cooked through. Drain well and pat dry with a clean kitchen towel.
Heat 2 tablespoons of the coconut oil in a 12-inch skillet over medium-high heat until shimmering. Add the parboiled rutabaga in a single layer and cook undisturbed for 4–5 minutes, until the undersides are deep golden brown. Stir and continue cooking for another 3–4 minutes, turning occasionally, until the cubes are golden on most sides. Transfer to a plate and set aside.
