Bright, clean, and deeply satisfying, this bowl is built around ingredients that support the body without asking it to work overtime. Turmeric, cumin, and oregano season the chicken thighs in a way that's both anti-inflammatory and genuinely delicious — not medicinal or bland. The chicken is seared until the skin turns deep golden, then finished in the oven so every bite stays juicy, while roasted zucchini and burst cherry tomatoes add sweetness and color alongside fluffy quinoa. A freshly squeezed lemon dressing with parsley, chives, and thyme ties everything together with brightness that feels restorative rather than heavy. Baby spinach forms the base of each bowl, and optional avocado adds healthy fat that rounds out the meal beautifully. Everything here is whole, recognizable, and free from the fermented, aged, or processed ingredients that can be problematic when you're working to reduce your toxic load. It makes four generous servings, so it's practical enough for a weeknight but polished enough to feel like real cooking.

Dried black pepper can sometimes contain mold toxins, but the trace amount used here is so small that it is likely tolerated by many. When possible, use a recently purchased organic spice and store it tightly closed in a cool, dry place. If you prefer to always avoid black pepper, please tap it and change its rating to Red.

Preheat the oven to 425°F (220°C). Combine the quinoa, water, and 1/4 tsp salt in a large saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the water is fully absorbed and the quinoa tails have unfurled, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork.
While the quinoa cooks, toss the zucchini and cherry tomatoes on a sheet pan with 1 tbsp olive oil and 1/4 tsp salt until evenly coated. Spread in a single layer and roast on the upper rack until the zucchini is tender and lightly browned at the edges and the tomatoes have burst, 18–20 minutes.
