Lean top round is sliced thin against the grain, then soaked for hours in a bright marinade of coconut aminos, fresh lemon juice and zest, dill, garlic, ginger, and turmeric until every strip is packed with flavor. Slow-drying in a low oven turns those strips into deeply browned, chewy-tender jerky with a citrusy, herbal edge that sets it apart from anything you'd grab at a gas station. There's no liquid smoke, sugar, or mystery preservatives involved — just real ingredients and time doing the work. It's a protein-packed snack you can toss in a bag for road trips, hikes, or busy afternoons without a second thought. This one fits neatly into a Whole30 pantry and makes portable snacking feel a lot less complicated.

Place the beef in the freezer for 30–45 minutes, until it is firm but not frozen solid — this makes slicing much easier. Using a sharp knife, slice the beef against the grain into strips about 1/8 to 1/4 inch thick. For chewier jerky, slice with the grain.
In a zip-top bag or shallow dish, combine the coconut aminos, lemon juice, lemon zest, fresh dill, garlic, ginger, turmeric, and sea salt. Stir or squeeze to mix well.
