Homemade beef jerky is one of those snacks that feels almost too good to be true — chewy, deeply savory, and completely portable. The challenge for anyone avoiding nightshades is that most commercial jerky and even many DIY marinades lean heavily on chili powder, paprika, or hot sauce, which are all off the table. This recipe sidesteps all of that by building bold, complex flavor from coconut aminos, bright lemon, fragrant dill, and a warm hit of turmeric and ginger — no peppers, no tomato-based anything. The result is a jerky that tastes genuinely sophisticated rather than like something is missing. Chilling the beef before slicing is a smart trick that makes getting those thin, even strips much easier, and the long marinade time means every piece is packed with flavor all the way through. Low-and-slow oven drying does the rest, giving you that perfectly chewy texture without any special equipment. Batch a full pound and a half and you'll have a week's worth of clean, satisfying snacking ready to go.

Place the beef in the freezer for 30–45 minutes, until it is firm but not frozen solid — this makes slicing much easier. Using a sharp knife, slice the beef against the grain into strips about 1/8 to 1/4 inch thick. For chewier jerky, slice with the grain.
In a zip-top bag or shallow dish, combine the coconut aminos, lemon juice, lemon zest, fresh dill, garlic, ginger, turmeric, and sea salt. Stir or squeeze to mix well.
