Bright, herby, and deeply savory, this beef jerky is a far cry from the overly sweet, additive-packed bags you find at the checkout counter. The marinade leans on coconut aminos instead of soy sauce, keeping things gentle on digestion while still delivering that rich, umami depth you want in a good jerky. Fresh lemon juice and zest cut right through the richness of the beef, while dill, ginger, and turmeric bring a layered, anti-inflammatory warmth that makes every strip feel intentional rather than just snack-y. Garlic and fresh ginger are both well-known gut-supportive ingredients, so the marinade is doing real work beyond just flavor. The low-and-slow oven method gives you total control — no dehydrator required — and the long marinating window means the beef absorbs every bit of that bright, citrusy brine before it ever hits the heat. It's the kind of snack you can feel good about reaching for between meals, whether you're managing a sensitive stomach or just trying to eat cleaner on the go.

Place the beef in the freezer for 30–45 minutes, until it is firm but not frozen solid — this makes slicing much easier. Using a sharp knife, slice the beef against the grain into strips about 1/8 to 1/4 inch thick. For chewier jerky, slice with the grain.
In a zip-top bag or shallow dish, combine the coconut aminos, lemon juice, lemon zest, fresh dill, garlic, ginger, turmeric, and sea salt. Stir or squeeze to mix well.
