Fermented foods are one of those things that sound intimidating until you realize the ingredient list is essentially just cabbage and salt. This sauerkraut is made entirely through lacto-fermentation β no vinegar, no additives, no preservatives β which means it's naturally compliant with the Whole30 framework and packed with the live cultures that make homemade kraut worth the wait. The process is mostly hands-off: a good massage session, a tight pack into a mason jar, and then patience does the rest. Caraway seeds are optional but add a subtle earthy warmth that makes the finished kraut feel a little more special alongside roasted meats or eggs. The hardest part is honestly just checking in daily to press the cabbage back below the brine line and skim off any foam β both totally normal parts of the process. By the end of the first week you'll already have something tangy and bright, and by week four it develops a deep, complex sourness that store-bought versions rarely match. Keeping a jar of this in the fridge means you always have a gut-friendly, flavor-packed condiment ready to go, with zero questionable ingredients to decode on a label.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
