Crunchy, tangy, and alive with natural fermentation, this sauerkraut is one of those kitchen projects that rewards patience in the most satisfying way. The ingredient list is beautifully minimal β just cabbage, non-iodized salt, and optional caraway seeds β which makes it a natural fit for anyone avoiding spice blends or anti-inflammatory additives that often sneak into store-bought versions. Many commercial krauts and seasoning mixes contain hidden ingredients that can be hard to track down, so making your own from scratch puts you completely in control of what goes into the jar. The process is straightforward: shred, salt, massage, pack, and wait. That hands-on massaging step is key β it coaxes enough brine out of the cabbage to create the liquid environment where fermentation does all the real work. You can start tasting as early as day seven and dial in the sourness to exactly where you like it, from bright and mild to deeply tangy and complex. Once it hits the fridge, it keeps for up to six months, meaning one batch goes a very long way on sandwiches, grain bowls, or straight from the jar.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
