Homemade sauerkraut is one of those ancient, almost magical kitchen projects β just cabbage, salt, and time transforming into something tangy, crunchy, and deeply satisfying. What makes this recipe so clean is how genuinely simple the ingredient list is: shredded green cabbage, non-iodized salt, and optional caraway seeds. No additives, no preservatives, no mystery ingredients hiding on a label. For anyone navigating soy sensitivities, store-bought fermented foods can be a minefield of unexpected additives and shared-facility warnings, so making your own is a real relief. The process is hands-on in the best way β you're literally massaging the cabbage until it releases its own brine, which becomes the liquid that drives the whole fermentation. That natural brine is what keeps everything safe and submerged as the good bacteria do their work over one to four weeks. The longer you let it go, the more complex and deeply sour it gets, so you can pull it at whatever stage matches your taste. Once it hits the fridge, it keeps for up to six months, meaning a single batch rewards you with a probiotic-rich condiment for months of grain bowls, sausages, sandwiches, and more.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
