Sauerkraut is one of those ancient, humble foods that rewards patience with serious flavor β tangy, crunchy, and alive with natural probiotics that no store-bought jar can quite match. This version is made with just cabbage, non-iodized salt, and optional caraway seeds, so there is nothing hidden in the ingredient list and zero concern about cross-contact with seafood or shellfish of any kind. The magic here is pure lacto-fermentation: salt draws moisture out of the cabbage, creating a natural brine that protects everything as beneficial bacteria slowly transform it into something complex and deeply satisfying. Massaging the cabbage by hand is genuinely one of the most therapeutic things you can do in a kitchen, and watching the brine pool in the bowl feels like a small miracle every time. You control the final flavor by tasting as it ferments β pull it at one week for something mild and bright, or let it ride the full four weeks for a bold, punchy tang that holds up beautifully alongside rich meats or grain bowls. Once it hits your fridge, it keeps for up to six months, meaning a single batch pays off for a long time.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
