Tangy, crunchy, and alive with natural flavor, this fermented cabbage is one of those kitchen projects that rewards patience with something genuinely delicious. The whole process relies on just two real ingredients β cabbage and non-iodized salt β so anyone avoiding seeds will want to simply skip the optional caraway and still end up with a beautifully complex kraut. Massaging the salt into the shredded cabbage draws out its own liquid, creating a natural brine that does all the preservation work without any vinegar or additives. Packing it tightly into a mason jar and keeping it submerged is really the only technique you need to master, and the daily check-ins are oddly satisfying once you see the bubbles doing their thing. The flavor evolves week by week β mild and bright at day seven, deeper and more rounded by week three or four β so you can pull it whenever it hits your personal sweet spot. Sealed up and refrigerated, a single batch keeps for months, meaning you'll have a gut-friendly, seed-free condiment ready to pile onto sausages, grain bowls, or sandwiches whenever the craving strikes.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
