Sauerkraut is one of those ancient, humble foods that somehow manages to be endlessly satisfying β crunchy, tangy, and deeply savory all at once. This version is made with nothing but cabbage, non-iodized salt, and optional caraway seeds, which means it's completely free of any meat-based ingredients and safe for anyone navigating a red meat sensitivity or allergy. There are no hidden broths, no cured meats tucked in, and no ambiguous additives β just lacto-fermentation doing its slow, reliable magic. The process is mostly hands-off: you massage the cabbage until it releases its own brine, pack it into a jar, and let time and beneficial bacteria do the rest. That daily check-in during the first week is genuinely satisfying, watching the bubbles form and the smell shift from fresh and grassy to properly sour and complex. You can pull it at one week for something mild and bright, or let it go the full four weeks for a deeply tangy kraut that holds its own on anything from grain bowls to grilled chicken sausage. Once it hits the fridge, it keeps for up to six months β so one batch goes a very long way.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
