Homemade sauerkraut is one of those deeply satisfying kitchen projects that rewards patience with something genuinely delicious β tangy, crunchy, and alive with flavor in a way that no store-bought jar can quite match. Conventional packaged versions often rely on vinegar, preservatives, or curing additives to speed up production, which is exactly what you're avoiding here. This recipe uses nothing but cabbage, non-iodized salt, and optional caraway seeds, letting natural lacto-fermentation do all the work over the course of one to four weeks. The process is beautifully simple: shred, salt, massage, pack, and wait. Massaging the cabbage until it releases its own brine is the key step β that liquid becomes the protective, acidic environment that ferments the cabbage safely without any added ingredients. You control the flavor entirely by how long you let it ferment, from a mild and lightly sour one-week kraut to a deeply tangy, complex four-week version. Once it hits your fridge, it keeps for up to six months and makes an incredible topping for sausages, grain bowls, or anything that needs a bright, probiotic-rich punch.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
