This tangy, crunchy ferment starts with nothing more than shredded green cabbage, salt, and a few caraway seeds, transformed slowly at room temperature into something deeply flavorful. The hands-on process is simple: massage the cabbage until it releases its own brine, pack it tightly into a jar, and let time and gentle fermentation do the rest. Over the course of a few weeks, the shreds soften and turn pleasantly sour, developing the complex tang that makes homemade sauerkraut so much better than anything from a shelf. Because you control the fermentation from start to finish, this is an easy way to build a gut-friendly staple that fits neatly into a low FODMAP kitchen. Spoon it over grilled proteins, tuck it into sandwiches, or eat it straight from the jar as a crisp, probiotic-rich side.

A serving of up to about 3/4 cup of cabbage is low in FODMAPs, and this recipe stays within that amount, making it likely Low FODMAP. If you prefer to always avoid cabbage, please tap it and change its rating to Red.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
