Homemade sauerkraut is one of those deeply satisfying kitchen projects where time and salt do almost all the work for you. Shredded green cabbage gets massaged with non-iodized salt until it releases its own brine, then it ferments slowly at room temperature until it's tangy, complex, and alive with flavor β no vinegar shortcuts, no additives, just cabbage and salt (and optional caraway seeds if you want a subtle earthy note). Because the ingredient list is so stripped down, this is naturally free of gluten without any substitutions or label-reading required. Store-bought versions can be hit or miss, and some brands sneak in preservatives or use shared processing lines that raise questions β making your own removes all of that uncertainty entirely. The process takes patience, but the hands-on time is minimal: a good 10-minute massage, some daily check-ins, and you're rewarded with a jar that keeps in the fridge for up to six months. It's incredible piled onto sausages, stirred into grain bowls, or eaten straight from the jar as a probiotic-rich snack. Once you taste the difference between homemade and store-bought, it's hard to go back.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
