Sauerkraut is one of those ancient, deeply satisfying ferments that proves you don't need a long ingredient list to create something truly complex. This version comes together with just cabbage, non-iodized salt, and optional caraway seeds β nothing more, nothing less, and absolutely no ginger anywhere in sight. That simplicity is actually what makes it so appealing for anyone navigating a sensitivity, since store-bought krauts can sneak in unexpected flavorings or spice blends that aren't always clearly labeled. The process is hands-on in the best way: you massage the cabbage until it releases its own natural brine, then let time and beneficial bacteria do the rest of the work. By day seven you'll have a lightly tangy, crunchy condiment, and by week four it develops a deep, rounded sourness that pairs beautifully with sausages, grain bowls, or even just eaten straight from the jar. The caraway seeds are entirely optional, so you can keep it completely plain or add that subtle earthy note depending on your preference. Once it hits the flavor you love, it seals up and keeps in the fridge for months β a genuinely rewarding project with a very long payoff.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
