Sauerkraut is one of those ancient, deeply satisfying foods that can be surprisingly hard to find in a store without citric acid or other acidulants sneaking into the ingredient list as preservatives or flavor boosters. This version skips all of that entirely β the only things going into the jar are cabbage, non-iodized salt, and optional caraway seeds, with the tangy sourness coming entirely from natural lacto-fermentation. That process is as old as food preservation itself: salt draws moisture out of the cabbage, creating a brine in which beneficial bacteria thrive and gradually acidify the kraut on their own terms. The result is a living, probiotic-rich condiment with a clean, complex sourness that no vinegar shortcut can replicate. You can taste it as early as one week in for a mild, lightly sour crunch, or let it go a full four weeks for a deeply tangy, funky flavor that pairs beautifully with sausages, grain bowls, or a simple piece of rye bread. The hands-on time is minimal β mostly just massaging the cabbage and checking in daily β and the payoff is a half-gallon jar of something genuinely delicious that keeps in the fridge for up to six months.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
