Sauerkraut is one of those ancient, deeply satisfying foods that proves you don't need a long ingredient list to create something truly complex. This version relies on nothing more than cabbage, non-iodized salt, and an optional pinch of caraway seeds β no spice blends, no hidden seasonings, and absolutely no cinnamon to worry about. The magic here is pure lacto-fermentation: salt draws moisture out of the cabbage, creating a natural brine that slowly transforms raw shreds into something tangy, funky, and alive. Many store-bought krauts and even homemade spice-forward versions sneak in warming spices, so making your own from scratch is the surest way to keep things clean and controlled. The process takes patience β a week at minimum, up to a full month if you want that deep, pronounced sourness β but the hands-on time is minimal and the results are genuinely rewarding. Packed into a mason jar and left to ferment at room temperature, it's a low-effort project that pays off every time you crack open the fridge. Pile it on sausages, stir it into grain bowls, or eat it straight from the jar; it keeps for up to six months and only gets better with time.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
