Homemade sauerkraut is one of those ancient, almost magical kitchen projects β just cabbage, salt, and time transforming into something tangy, crunchy, and deeply satisfying. Many store-bought versions sneak in stabilizers and thickeners to extend shelf life or improve texture, which is exactly the kind of additive that makes label-reading such a chore. This recipe sidesteps all of that entirely, relying on nothing but shredded green cabbage, non-iodized salt, and an optional pinch of caraway seeds to do the work. The process is hands-on in the best way: you massage the cabbage until it releases its own brine, pack it into a mason jar, and let natural lacto-fermentation take over at room temperature. Daily check-ins keep things on track, and you can start tasting at the one-week mark β mild and lightly sour early on, building to a bold, complex tang by week four. The result is a live, probiotic-rich condiment that's genuinely better than anything in a jar at the grocery store, and you know exactly what went into it. Pile it on sausages, layer it into sandwiches, or eat it straight from the jar β no regrets either way.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
