Homemade sauerkraut is one of those deeply satisfying kitchen projects where time and salt do almost all the work for you. Shredded green cabbage is massaged with non-iodized salt until it releases its own natural brine, then packed tightly into a mason jar and left to ferment at room temperature for anywhere from one to four weeks depending on how tangy you like it. Optional caraway seeds add a subtle earthy note that makes the finished kraut feel a little more complex and old-world. Because the entire recipe is built on just cabbage, salt, and water, there are no hidden additives, no mystery blends, and absolutely no tree nut ingredients to navigate β a real relief when store-bought versions can be surprisingly hard to vet. The fermentation process is low-effort once the jar is packed; daily check-ins to press the cabbage below the brine line are all that stand between you and a crunchy, probiotic-rich condiment. Pile it onto sausages, layer it into sandwiches, or eat it straight from the jar β after a month of patient waiting, you will have earned every tangy bite. Once sealed and refrigerated, it keeps for up to six months, so one batch goes a very long way.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
