Sauerkraut is one of those ancient, humble foods that commercial versions have managed to complicate with unnecessary additives and preservatives β including synthetic antioxidants like BHA and BHT that show up in packaged and processed foods more often than most people realize. This homemade version keeps things beautifully simple: just cabbage, non-iodized salt, and optional caraway seeds, relying entirely on natural lacto-fermentation to develop flavor and preserve the finished product. The process is hands-on in the best way β you massage the cabbage until it releases its own brine, then let time and beneficial bacteria do the rest of the work. That slow fermentation is what builds the complex, tangy depth that no store-bought jar can quite replicate. You can start tasting at the one-week mark for something mild and bright, or let it go a full four weeks for a deeply sour, funky kraut that's incredible piled onto sausages, stirred into soups, or eaten straight from the jar. Once it hits your preferred flavor, it seals up and keeps in the fridge for up to six months β a long-lasting, clean-ingredient staple you made entirely from scratch.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
