Tangy, crunchy, and alive with probiotic goodness, this homemade sauerkraut is one of those recipes that rewards patience with serious flavor. It comes together with just cabbage, non-iodized salt, and optional caraway seeds β nothing hidden, nothing processed, nothing that could sneak in unwanted grains. That simplicity is exactly what makes it such a reliable choice when you need to know precisely what's in your fermented foods, since store-bought versions can sometimes include additives or be produced in facilities handling all kinds of ingredients. The process is hands-on in the best way: you massage the cabbage until it releases its own brine, pack it into a mason jar, and let natural lacto-fermentation do the rest over one to four weeks. At the one-week mark it's bright and mildly sour; by week four it develops a deep, complex tang that pairs beautifully with sausages, grain bowls, or just eaten straight from the jar. Daily check-ins keep things on track, and the result is a living condiment that stays fresh in the fridge for up to six months. Once you've made your own batch, it's genuinely hard to go back to the store-bought stuff.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
