Fermented foods are among the most celebrated tools in an anti-inflammatory kitchen, and homemade sauerkraut is one of the simplest and most rewarding to make from scratch. This recipe uses just cabbage, non-iodized salt, and optional caraway seeds β nothing processed, no vinegar shortcuts, no additives that could undermine the benefits you're after. The real magic happens through lacto-fermentation, where naturally occurring bacteria on the cabbage convert sugars into lactic acid, producing a living food packed with beneficial probiotics that support gut health and help calm systemic inflammation over time. Store-bought versions are often pasteurized, which kills those beneficial cultures entirely, so making your own is genuinely worth the effort. The hands-on work is minimal β mostly massaging the cabbage until it releases its own brine β and then time does the rest. You can start tasting at one week for a mild, lightly sour kraut, or let it go a full four weeks for something deeply tangy and complex. A spoonful alongside roasted vegetables, grain bowls, or eggs is one of the easiest ways to work fermented foods into your everyday routine.

Quarter the cabbage, remove the core, and slice it as thinly as possible β about 1/8-inch shreds. A mandoline or sharp chef's knife both work well. Weigh the shredded cabbage and note the weight; you need 1.5β2% of that weight in non-iodized salt (roughly 1 tbsp plus 1 tsp for 2 lb of cabbage).
Combine the shredded cabbage and salt in a large mixing bowl. Massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and feels limp and wet β the brine should pool visibly at the bottom of the bowl. Stir in the caraway seeds, if using.
