Fresh kiwi and real lime juice are the stars here, muddled and shaken together into something that tastes genuinely vibrant and a little tropical. Maple syrup adds just enough sweetness to balance the tartness without tipping into cloying territory, and the sparkling water finish gives it that satisfying fizz you want in a proper mocktail. Every single ingredient is whole and unprocessed, so there's no need to squint at a label wondering what's hiding in a flavoring packet or premade mix. The straining step is a small but brilliant move β it pulls out all the pulp and seeds so what lands in your glass is silky-smooth and beautifully clear. Poured over ice with a lime wheel and a sprig of mint, it looks like something you'd pay twelve dollars for at a rooftop bar. It's the kind of drink that makes you feel like you're not missing anything at all.

Place the sliced kiwi in a cocktail shaker or large jar. Muddle firmly with a muddler or the handle of a wooden spoon until the kiwi is fully broken down into a rough pulp, about 10β12 presses.
Add the lime juice, maple syrup, cold water, and ice to the shaker. Seal and shake vigorously for 15β20 seconds, until the outside of the shaker feels very cold.
