This slow-simmered rice pudding gets its silky texture from basmati rice cooked low and slow in whole milk until it thickens into something spoonable and rich. Saffron threads bloom into a warm golden hue while ground cardamom perfumes every spoonful, and a fragrant splash of rose water ties the whole pot together at the end. Buttery toasted cashews and almonds add crunch, while plump golden raisins bring little bursts of natural sweetness throughout. A scatter of chopped pistachios on top finishes it with color and a satisfying bite. Serve it warm, at room temperature, or well-chilled — however you like it, this one fits neatly into an added sugar free spread without losing any of its comfort-food charm.

Combine the milk and rinsed basmati rice in a large heavy-bottomed saucepan over medium heat. Bring to a gentle boil, stirring frequently to prevent the milk from scorching on the bottom.
Reduce the heat to medium-low and cook, stirring every 2–3 minutes and scraping the bottom and sides of the pan, until the milk has reduced by roughly half and the rice is completely soft and the mixture is thick enough to coat the back of a spoon, about 35–40 minutes.
