Heat 2 tablespoons of the vegetable oil in a small saucepan or wok over medium-high heat until shimmering. Add the broken dried egg noodle pieces in a single layer and fry, turning once, for 1–2 minutes until golden and crisp. Transfer to a paper-towel-lined plate and set aside.
Heat the remaining 1 tablespoon of oil in a large pot or Dutch oven over medium heat. Add the red curry paste, curry powder, and turmeric and cook, stirring constantly, for 2–3 minutes until the paste is fragrant and darkens slightly.
