This vibrant bowl is proof that eating without yeast doesn't mean eating without excitement. Massaged kale forms the hearty base, soaking up a golden turmeric-lemon dressing that's bright, warming, and completely free of vinegar or fermented ingredients — no hidden yeast concerns here. Fluffy quinoa adds satisfying substance, while cumin-and-paprika roasted chickpeas bring a crispy, savory crunch that makes every bite feel intentional. Creamy avocado, shredded red cabbage, and raw pumpkin seeds round things out with color, texture, and healthy fats that keep you full long after the bowl is empty. The dressing comes together with fresh lemon juice, raw honey, ginger, and garlic — simple pantry staples that deliver serious flavor without relying on anything fermented or processed. It's the kind of meal that looks impressive enough to serve to guests but is genuinely easy to pull off on a weeknight. Whether you're navigating a strict elimination protocol or just trying to eat cleaner, this salad delivers on every front.

Preheat the oven to 400°F (205°C). Combine the rinsed quinoa, 2 cups water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the water is fully absorbed and the quinoa tails have unfurled, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork and spread onto a plate to cool slightly.

While the quinoa cooks, pat the drained chickpeas very dry with paper towels. Spread them on a rimmed baking sheet, drizzle with 1 tbsp olive oil, and toss with the cumin, smoked paprika, and 1/4 tsp salt until evenly coated. Roast until the chickpeas are golden and crisp at the edges, 20–25 minutes, shaking the pan once halfway through.
