This vibrant bowl is built around ingredients that genuinely pull their weight during pregnancy — folate-rich kale, protein-packed quinoa, and creamy avocado all show up in one satisfying meal. Massaging the kale with olive oil and salt is the secret move here: it softens the leaves so they're tender and easy to eat rather than tough and bitter. The roasted chickpeas come out of the oven golden and crisp, adding a satisfying crunch alongside the pumpkin seeds and shredded red cabbage. That golden turmeric lemon dressing ties everything together with brightness and warmth, and the black pepper in the recipe actually helps your body absorb the turmeric more effectively. Avocado brings healthy fats and a buttery richness that makes this feel indulgent even though every single ingredient is doing something good for you. It's the kind of meal that's easy to prep in stages — roast the chickpeas, cook the quinoa, massage the kale — and comes together without any stress. Fresh parsley on top is optional, but it adds a pop of color that makes the whole bowl look as good as it tastes.

Preheat the oven to 400°F (205°C). Combine the rinsed quinoa, 2 cups water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the water is fully absorbed and the quinoa tails have unfurled, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork and spread onto a plate to cool slightly.
While the quinoa cooks, pat the drained chickpeas very dry with paper towels. Spread them on a rimmed baking sheet, drizzle with 1 tbsp olive oil, and toss with the cumin, smoked paprika, and 1/4 tsp salt until evenly coated. Roast until the chickpeas are golden and crisp at the edges, 20–25 minutes, shaking the pan once halfway through.
