This hearty bowl is the kind of salad that actually fills you up — layered with fluffy quinoa, crispy roasted chickpeas, and massaged kale that turns silky and tender rather than tough and chewy. The golden turmeric-lemon dressing ties everything together with a bright, earthy kick that makes every forkful feel intentional. Managing iodine intake often means scrutinizing packaged sauces and dressings, but here everything is made from scratch with whole, straightforward ingredients you can trust. Olive oil, fresh lemon juice, raw honey, and ground spices keep the dressing clean and flavorful without any hidden additives to second-guess. The roasted chickpeas bring a satisfying crunch that holds up even after you add the dressing, and the sliced avocado and pumpkin seeds add richness and texture in every bite. Red cabbage gives the bowl a pop of color and a subtle crispness that balances the softness of the quinoa and kale beautifully. It's the kind of meal you'll want to keep on rotation — nourishing, vibrant, and genuinely delicious without feeling like a compromise.

Preheat the oven to 400°F (205°C). Combine the rinsed quinoa, 2 cups water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the water is fully absorbed and the quinoa tails have unfurled, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork and spread onto a plate to cool slightly.
While the quinoa cooks, pat the drained chickpeas very dry with paper towels. Spread them on a rimmed baking sheet, drizzle with 1 tbsp olive oil, and toss with the cumin, smoked paprika, and 1/4 tsp salt until evenly coated. Roast until the chickpeas are golden and crisp at the edges, 20–25 minutes, shaking the pan once halfway through.
