This hearty vegetable soup comes together fast in the Instant Pot, with tender Yukon Gold potatoes, sweet carrots, and crisp-tender green beans simmering in a tomato-rich broth. Olive oil forms the flavor base right from the start, sautéed with onion and garlic until fragrant, then deepened with a spoonful of tomato paste before everything gets pressure-cooked to perfection. Smoked paprika, thyme, and oregano bring warmth and depth, while corn and green beans add pops of color and texture in every spoonful. It's a wholesome, vegetable-forward bowl built on olive oil, legumes-friendly produce, and simple pantry herbs, which makes it a natural fit for a Mediterranean-style table. Finish it with a scatter of fresh parsley for brightness, and you've got a satisfying, plant-packed meal that comes together in well under an hour.
