This hearty, vegetable-packed soup comes together fast in the Instant Pot, with tender carrots, celery, and Yukon Gold potatoes simmered in a rich tomato-based broth. Smoked paprika, thyme, and oregano bring warmth and depth, while a spoonful of tomato paste deepens the flavor before everything gets pressure-cooked to perfection. Green beans and sweet corn add color and texture, and a shower of fresh parsley brightens each bowl right before serving. Built entirely from whole vegetables, good olive oil, and simple herbs, it's a naturally soothing, nourishing bowl that fits beautifully into an anti-inflammatory way of eating. It's the kind of meal you can feel good about on repeat — comforting, colorful, and packed with real food from start to finish.
