This hearty vegetable soup comes together fast thanks to the Instant Pot, with tender carrots, celery, and Yukon Gold potatoes simmered alongside diced tomatoes and low-sodium vegetable broth for a deeply savory base. A quick sauté of onion and garlic, plus a spoonful of tomato paste, builds real depth before everything gets pressure-cooked to perfection in just eight minutes. Smoked paprika, thyme, and oregano bring warmth and complexity, while green beans and sweet corn add pops of color and texture in every spoonful. A scatter of fresh parsley at the end brightens the whole bowl. Because the flavor here comes from slow-built aromatics, herbs, and naturally sweet vegetables rather than heavy seasoning, it's an easy one to keep in your rotation when you're watching sodium. Comforting, colorful, and endlessly satisfying, this is the kind of soup you'll want on repeat all season long.
