Steamed artichokes have a reputation for being fussy, but the Instant Pot turns them into one of the most effortless things you can put on the table. The pressure cooker locks in moisture and delivers perfectly tender leaves in a fraction of the time it takes on the stovetop, with almost zero hands-on effort required. Each leaf pulls away cleanly and begs to be dragged through the warm lemon-garlic butter, which comes together in just a couple of minutes while the pressure releases. That dipping sauce โ bright with fresh lemon juice, fragrant with minced garlic, and finished with a little parsley โ is simple enough that you'll want to make extra. Every ingredient here is straightforward and whole, so there's no need to scan labels or worry about hidden additives sneaking into your meal. This is the kind of dish that feels impressive at the table but asks almost nothing of the cook, and it's a genuinely satisfying way to eat with your hands.

Trim the artichokes: slice off the top 1 inch of each artichoke with a chef's knife, then use kitchen shears to snip the sharp tips off the remaining outer leaves. Cut the stem flush with the base so each artichoke sits flat. Rub all cut surfaces immediately with the cut side of one lemon half to prevent browning.
Pour 1 cup water into the Instant Pot insert. Squeeze the remaining lemon half into the water, then drop in the spent lemon half, the smashed garlic cloves, bay leaf, and salt. Place the trivet or steamer basket in the pot and set the artichokes on it stem-side down.
