Steamed artichokes have a reputation for being fussy, but the Instant Pot turns them into one of the most hands-off, rewarding things you can make on a weeknight. The pressure-cooking environment locks in moisture and coaxes each leaf to a perfectly tender, pull-apart texture that stovetop steaming rarely matches this consistently. A lemon-scented water bath infused with smashed garlic and a bay leaf perfumes the artichokes from the inside out as they cook, so the flavor starts before you even get to the dipping sauce. That sauce is the real showstopper โ a warm, garlicky lemon butter that clings to every leaf and makes the whole ritual of pulling and scraping feel genuinely luxurious. Every single ingredient here is naturally free of seeds, so there is no label-checking or substitution stress involved โ just clean, whole produce and simple pantry staples. This is the kind of recipe that looks impressive on the table but asks almost nothing of you in the kitchen.

Trim the artichokes: slice off the top 1 inch of each artichoke with a chef's knife, then use kitchen shears to snip the sharp tips off the remaining outer leaves. Cut the stem flush with the base so each artichoke sits flat. Rub all cut surfaces immediately with the cut side of one lemon half to prevent browning.
Pour 1 cup water into the Instant Pot insert. Squeeze the remaining lemon half into the water, then drop in the spent lemon half, the smashed garlic cloves, bay leaf, and salt. Place the trivet or steamer basket in the pot and set the artichokes on it stem-side down.
