Steamed artichokes have a reputation for being fussy, but the Instant Pot turns them into one of the most low-effort, high-reward vegetables you can put on the table. The pressure cooker locks in moisture and delivers perfectly tender leaves in a fraction of the time it takes on the stovetop, with zero guesswork about whether the center is cooked through. A fragrant bath of smashed garlic, bay leaf, and fresh lemon infuses the artichokes from the outside in, so every leaf you pull away is already packed with flavor before it even touches the dipping sauce. And that dipping sauce โ a warm, garlicky lemon butter with a hit of fresh parsley โ is the kind of thing you'll want to pour over everything else on your plate. This is naturally a tree-nut-free dish from start to finish, built entirely on fresh vegetables, butter, lemon, and garlic, so there's nothing to swap out or second-guess. It works beautifully as a starter for a dinner party or as a slow, satisfying snack where pulling each leaf is half the fun. Serve them upright and let everyone dig in while the butter is still warm.

Trim the artichokes: slice off the top 1 inch of each artichoke with a chef's knife, then use kitchen shears to snip the sharp tips off the remaining outer leaves. Cut the stem flush with the base so each artichoke sits flat. Rub all cut surfaces immediately with the cut side of one lemon half to prevent browning.
Pour 1 cup water into the Instant Pot insert. Squeeze the remaining lemon half into the water, then drop in the spent lemon half, the smashed garlic cloves, bay leaf, and salt. Place the trivet or steamer basket in the pot and set the artichokes on it stem-side down.
