Whole steamed artichokes feel like a special occasion, but the Instant Pot makes them completely weeknight-friendly โ no hovering over a boiling pot for an hour. The pressure cooker locks in moisture beautifully, leaving each leaf tender and the heart silky-soft in a fraction of the stovetop time. A fragrant bath of lemon, smashed garlic, and bay leaf perfumes the artichokes from the inside out as they cook, so the flavor goes well beyond plain steamed vegetables. Then there's the dipping butter โ warm, garlicky, bright with fresh lemon juice โ which turns every pulled leaf into its own little bite of something indulgent. This is naturally free of grains and cereals entirely, so there's nothing to swap or scrutinize on a label; it's just fresh produce, butter, and aromatics doing all the work. Pull a leaf, scrape it through that butter, and repeat until you reach the prize at the center.

Trim the artichokes: slice off the top 1 inch of each artichoke with a chef's knife, then use kitchen shears to snip the sharp tips off the remaining outer leaves. Cut the stem flush with the base so each artichoke sits flat. Rub all cut surfaces immediately with the cut side of one lemon half to prevent browning.
Pour 1 cup water into the Instant Pot insert. Squeeze the remaining lemon half into the water, then drop in the spent lemon half, the smashed garlic cloves, bay leaf, and salt. Place the trivet or steamer basket in the pot and set the artichokes on it stem-side down.
