Artichokes can feel intimidating, but the Instant Pot makes them genuinely foolproof โ tender all the way through without any guesswork or hovering over a stovetop pot. Each artichoke is steamed over a fragrant bath of water, lemon, smashed garlic, and a bay leaf, so the flavor works its way into every leaf before you even get to the dipping sauce. And that sauce is worth talking about on its own: melted butter with fresh lemon juice, minced garlic, and a little parsley comes together in just a couple of minutes and turns every pulled leaf into something you'll want to linger over. The whole setup is completely free of the warm, sweet spice that sneaks into so many restaurant preparations and jarred sauces, so you get clean, bright, savory flavor from start to finish. It's a naturally simple ingredient list โ fresh produce, butter, lemon, salt โ with nothing hidden or unnecessary. Whether you're serving these as a starter or making them the main event with a crusty loaf of bread, they're the kind of dish that feels a little special without asking much of you.

Trim the artichokes: slice off the top 1 inch of each artichoke with a chef's knife, then use kitchen shears to snip the sharp tips off the remaining outer leaves. Cut the stem flush with the base so each artichoke sits flat. Rub all cut surfaces immediately with the cut side of one lemon half to prevent browning.
Pour 1 cup water into the Instant Pot insert. Squeeze the remaining lemon half into the water, then drop in the spent lemon half, the smashed garlic cloves, bay leaf, and salt. Place the trivet or steamer basket in the pot and set the artichokes on it stem-side down.
