Artichokes are one of those vegetables that feel inherently fancy but are actually wonderfully low-maintenance once you know the trick โ and the Instant Pot makes the whole process nearly foolproof. The pressure cooker locks in moisture so each leaf comes out perfectly tender, with that sweet, slightly nutty flavor that makes pulling them apart leaf by leaf genuinely fun. A fragrant bath of smashed garlic, bay leaf, and fresh lemon infuses the artichokes as they cook, so they taste seasoned all the way through before they even hit the dipping butter. That butter, by the way, is the real showstopper โ melted low and slow with minced garlic, bright lemon juice, and a handful of fresh parsley, it's the kind of sauce you'll want to pour over everything. Because this dish is built entirely from whole vegetables, aromatics, and simple dairy, there's nothing hidden to worry about โ no thickeners, no flour, no ambiguous pantry shortcuts. It's an elegant appetizer or a relaxed weeknight side that happens to be naturally free of gluten without any substitutions required. Serve them upright on a platter and let everyone dig in โ it's one of those meals that slows the table down in the best possible way.

Trim the artichokes: slice off the top 1 inch of each artichoke with a chef's knife, then use kitchen shears to snip the sharp tips off the remaining outer leaves. Cut the stem flush with the base so each artichoke sits flat. Rub all cut surfaces immediately with the cut side of one lemon half to prevent browning.
Pour 1 cup water into the Instant Pot insert. Squeeze the remaining lemon half into the water, then drop in the spent lemon half, the smashed garlic cloves, bay leaf, and salt. Place the trivet or steamer basket in the pot and set the artichokes on it stem-side down.
