Artichokes have a reputation for being fussy, but the Instant Pot completely changes the game โ what once took 45 minutes on the stovetop is now a hands-off pressure-cook with a natural release and almost zero babysitting. The steaming liquid gets a boost from smashed garlic, a bay leaf, and fresh lemon, so the artichokes absorb a subtle brightness before they even hit the plate. Each leaf pulls away tender and silky, ready to be dragged through the warm lemon-garlic butter that comes together in just a couple of minutes on the side. That dipping sauce โ melted butter, minced garlic, a squeeze of lemon, and a little fresh parsley โ is simple enough to feel effortless but rich enough to make every bite feel indulgent. The whole ingredient list is naturally free of celery and celery derivatives, so there's no label-scanning or substitution stress involved. This is the kind of dish that looks impressive on a dinner table but asks very little of the cook, which is exactly the kind of recipe worth keeping in your back pocket.

Trim the artichokes: slice off the top 1 inch of each artichoke with a chef's knife, then use kitchen shears to snip the sharp tips off the remaining outer leaves. Cut the stem flush with the base so each artichoke sits flat. Rub all cut surfaces immediately with the cut side of one lemon half to prevent browning.
Pour 1 cup water into the Instant Pot insert. Squeeze the remaining lemon half into the water, then drop in the spent lemon half, the smashed garlic cloves, bay leaf, and salt. Place the trivet or steamer basket in the pot and set the artichokes on it stem-side down.
