Set the Instant Pot to Sauté (high). Place the onion halves and ginger cut-side down directly on the hot insert and cook, undisturbed, for 5–6 minutes, until the cut surfaces are deeply charred and fragrant. Transfer to a plate.
Add the star anise, cinnamon stick, cloves, coriander seeds, and black peppercorns to the insert and toast, stirring, for 1–2 minutes, until fragrant and lightly darkened — watch closely, as they can scorch quickly. Cancel Sauté.
