Creamy, dreamy homemade hummus is one of those things that genuinely tastes better than anything you can pull off a store shelf — and the Instant Pot makes the whole process surprisingly hands-off. Starting from dried chickpeas means you control every single ingredient, which is a real relief when you're navigating store-bought dips that often sneak in additives or are processed on shared lines. The baking soda in the pressure cooker helps the chickpeas cook up impossibly tender, and that softness is what gives the final blend its ultra-smooth, restaurant-quality texture. Blending the tahini, lemon, garlic, and cumin first before adding the chickpeas is a smart technique that builds a silky, pale base before the legumes even hit the machine. A slow drizzle of ice water at the end loosens everything into that perfectly spreadable, cloud-like consistency. Finished with good olive oil, a dusting of smoked paprika, and fresh parsley, it looks as gorgeous as it tastes — and every ingredient on the list is naturally free of soy, no substitutions required.

Place the dried chickpeas in a large bowl and cover with 4 cups of water. Soak at room temperature for at least 8 hours or overnight, then drain and rinse through a colander.
Add the soaked, drained chickpeas, 3 cups of fresh water, and the baking soda to the Instant Pot insert. Secure the lid and set the valve to Sealing. Cook on High Pressure for 20 minutes, then allow the pressure to release naturally for 15 minutes before carefully turning the valve to Venting to release any remaining pressure.
