Creamy, cloud-like hummus made entirely from scratch is one of those things that genuinely ruins store-bought for you forever. Starting with dried chickpeas and pressure-cooking them until they're almost falling apart is the secret to that ultra-smooth, restaurant-quality texture — and the Instant Pot makes the whole process surprisingly hands-off. Tahini, fresh lemon juice, and a touch of cumin come together in the blender to build a rich, nutty base before the chickpeas even hit the mix, which is a small step that makes a big difference. Drizzling in ice water while the machine runs gives the final result that light, whipped consistency that's almost impossible to achieve any other way. Every single ingredient here is naturally free from pork and pork-derived additives, so there's no label-reading stress or ingredient substitutions required — just clean, wholesome components from start to finish. Finish it with a generous pour of olive oil, a dusting of smoked paprika, and a handful of fresh parsley, and it looks as good as anything you'd order at a mezze spread. Serve it with warm pita, fresh vegetables, or honestly just a spoon.

Place the dried chickpeas in a large bowl and cover with 4 cups of water. Soak at room temperature for at least 8 hours or overnight, then drain and rinse through a colander.
Add the soaked, drained chickpeas, 3 cups of fresh water, and the baking soda to the Instant Pot insert. Secure the lid and set the valve to Sealing. Cook on High Pressure for 20 minutes, then allow the pressure to release naturally for 15 minutes before carefully turning the valve to Venting to release any remaining pressure.
